Afternoon can go a few ways– so frantic you don’t have time to think about anything exceptbut the children or the deadline you need to meet by the end of the day. Perhaps you find yourself at your desk yawning for no reason waiting the day to be over, even though there is a pile of work to get through, or  as soon as 3.00pm rolls around and that sweet food craving hits.

If frantic describes your afternoons, food probably doesn’t cross your mind, but if you are either of the later two, heading to the kitchen to see if you can find a pick me up is a common routine. We have the best intentions and pack fruit and/or yogurt, but sometimes that doesn’t cut it. Be it for a treat at work, or something for home, try these afternoon snacks that will certainly hit the spot, but also offer our body great nutritional value.

Note these do contain nuts so are not suitable to primary school and some secondary school lunch boxes.

Chick Pea and Pistachio Cookies

10 minutes preparation time
15-20 minutes cooking time

Makes 18 biscuits

Ingredients

  • 400g chick peas, liquid drained and outer shell removed
  • 1 ½ tablespoons macadamia oil
  • 1 tsp vanilla essence
  • ¼ cup honey
  • ½ cup pistachio nuts
  • ½ cups rolled oats

Method

  1. Pre-heat oven to 200oC and line 2 trays with baking paper.
  2. Place the chick peas, macadamia oil, vanilla essence and honey a food processor and combine until the mixture is a smooth consistency.
  3. Add pistachio nuts to the food processor and pulse lightly until the nuts are just crushed.
  4. Transfer the mixture to a bowl and stir through the rolled oats until the mixture is a manageable consistency.
  5. Roll tablespoon size portions of the mixture in balls and place on the baking trays. Slightly flatten each ball then place in the hot oven. Cook for 15-20 minutes or until golden brown.
  6. Allow biscuits to rest for 5 minutes before serving
  7. Biscuits will keep in an airtight container for up to one week.

Banana and Peanut Butter Biscuits

10 minutes preparation time
15-20 minutes cooking time
Makes 12 biscuits

Ingredients

  • 1 large banana, mashed
  • ½ cup crunchy peanut butter
  • ¼ cup honey
  • 1 egg
  • 1 tsp ground cinammon
  • ½ – ¾ cup self raising flour
  • ¼ cup LSA
  • ½ cup rolled oats
  • ¼ cup raw peanuts

Method

  1. Pre-heat oven to 200oC and line a baking tray with baking paper.
  2. Place the banana, peanut butter, honey, egg, flour, LSA and cinnamon into a food processor and combine until the mixture is a smooth consistency.
  3. Transfer the mixture to a bowl, and stir through the rolled oats and peanuts.
  4. Roll tablespoon size portions of the mixture in balls and place on the baking trays. Slightly flatten each ball then place in the hot oven. Cook for 15-20 minutes or until golden brown.
  5. Allow biscuits to rest for 5 minutes before serving
