Healthy Breakfast Muffins

15 minutes preparation time, 20 minutes cooking time
Serves 6

Ingredients

  • 1 ripe banana, mashed
  • 5 cup blueberries
  • 1 egg
  • ½ cup self-raising flour
  • ½ cup wholemeal self-raising flour
  • ¾ cup rolled oats
  • ¼ cup shredded coconut
  • 1 tsp cinnamon
  • 1 tsp chia seeds
  • ¼ cup milk

Method

  1. Preheat oven to 180o
  2. Whisk together ripe banana and egg in a small bowl.
  3. In a separate, larger bowl, combine flour, oats, coconut, cinnamon, chia seeds and blueberries.
  4. Add the milk and banana and egg to the dry ingredients and stir until just combined.
  5. Spoon mixture into a lined 6 serve muffin tray and bake for 20 minutes or until golden.

Homemade Fruit Muffins

15 minutes preparation time, 20 minutes cooking time
Serves 6

Ingredients

  • ½ cup wholemeal self-raising flour
  • ¼ cup self-raising flour
  • ½ cup almond meal
  • ½ cup shredded coconut
  • ½ cup dried fruit (apricot, sultanas, raisins, date, cranberries etc)
  • 1 Tb sunflower seeds
  • 1 Tb pepita seeds
  • 1 tsp chia seeds
  • 1 tsp cinnamon
  • 1 egg
  • ¼ cup macadamia oil
  • ¼ – ½ cup milk

Method

  1. Preheat oven to 180o
  2. In a larger bowl, combine flour, almond meal, coconut, dried fruit, seeds and cinnamon.
  3. Combine egg, oil and ¼ cup of milk in a bowl. Add this to the dry ingredients and stir until combined. Add more milk if required.
  4. Spoon mixture into a lined 6-serve muffin tray and bake for 20 minutes or until golden.
