If you are looking for a quick, easy weeknight dinner, or something different for you or your families lunch box, you can’t go wrong with a delicious fritter. Starting with flour and an egg, you can whip up something really delicious with many of the items in your fridge or pantry and a herb and spice or two.

Zucchini, Haloumi and Lentil Fritters

Makes 12+ fritters
Preparation time: 10 minutes, Cooking time: 4-6 minutes per fritter

Ingredients:

  • 550g zucchinis
  • 400g can lentil, drained and rinsed
  • 225g haloumi, grated
  • 1 teaspoon chopped coriander root
  • ½ cup self raising flour
  • 2 eggs, lightly beaten
  • Pepper to taste

Method

  1. Grate the zucchinis, place them in a cloth or tee-towel and squeeze the excess water.
  2. Combine the grated zucchini, lentils, grated haloumi, coriander root and flour in a bowl.
  3. In a separate bowl, lightly beat the two eggs and add to the main mixture. Stir until combined and season with pepper.
  4. Heat a large fry pan on moderate to high heat, slightly grease with spray oil. Spoon large serves of the mixture into the frying pan. It is a thick mixture, so you many need to spread it evenly into a circle. Cook the fritter for 2-3 minutes of each side or until golden and cooked through.
  5. Repeat until all mixture is used.
  6. Serve with mashed avocado and salad if desired.

Sweet potato and Corn Fritters

Makes: 15+ fritters
Preparation time: 15 minutes, Cooking time: 4-6 minutes per fritter

Ingredients:

  • 500g sweet potato
  • 120g feta cheese, crumbed
  • 420g can corn
  • 1 onion, halved and sliced
  • 1/3 cup self raising flour
  • 3 eggs, lightly beaten
  • pepper to taste
  • ½ cup milk

Method

  1. Spray a large frying pan with olive oil spray and sauté the onion until it starts turning brown and becomes aromatic.
  2. Meanwhile, cut the sweet potato into large pieces and grate each piece. Place in a cloth or tee-towel and squeeze the excess water from the sweet potato.
  3. Combine the grated sweet potato, crumbed feta, corn, cooked onion and flour in a bowl.
  4. In a separate bowl, lightly beat the three eggs and add to the main mixture. Stir until combined and season with pepper.
  5. Add milk a little at a time until the mixture forms a batter like consistency (you may bot need all the milk).
  6. Heat a large fry pan on moderate to high heat, slightly grease with spray oil. Spoon large serves of the mixture into the frying pan. It is a thick mixture, so you many need to spread it evenly into a circle. Cook the fritter for 2-3 minutes of each side or until golden and cooked through.
  7. Repeat until all mixture is used.
  8. Serve with alone or with your choice of sides such as smoked salmon or mashed avocado and salad if desired.

Veggie Fritters

Makes: 15+ fritters
Preparation time: 10 minutes, Cooking time: 4-6 minutes per fritter

Ingredients:

  • 1 large onion, diced
  • 2 cloves of garlic, grated or crushed
  • 2 large carrots, peeled and grated, then excess water squeezed out
  • 2 zucchinis, grated and excess water squeezed out
  • 1 cup self-raising flour
  • 1 teaspoon dried herbs
  • ¼ cup grated parmesan cheese
  • 2 egg, whisked
  • Salt and pepper to taste
  • ⅔ cup milk

Method:

  1. Spray a large frying pan with olive oil spray and sauté the onion and garlic until they start turning brown and become aromatic.
  2. Once cooked, transfer the onion and garlic to a heatproof bowl and stir through the carrot and zucchini.
  3. Next add the flour, dried herbs, parmesan cheese, eggs and a little salt and pepper. Slowly add the milk until the mixture becomes a smooth batter.
  4. Reheat the frying pan on medium-high and add spray again with oil. Spoon your desired amount of mixture into the pan (as you would pancakes). Cook on each side for 2-3 minutes or until golden brown.
  5. Fritters are great as a snack or can accompany your choice of protein such as smoked salmon and other salad vegetables.
